If you missed Medical Monday let me reminisce
I said I was going to make something with this
Some use it as an substitution for fish
Banana blossom that’s what it is
What shall I make with a Jamaican twist?
What about Jamaica’s national dish
Ackee and saltfish without the fish
If you recall I’ve already made something like this
Instead of the fish I used Jackfruit
Found that it was a very good substitute
So maybe Banana blossom can work
I’m going to try it, it wont hurt
Saute some onions and garlic
In some coconut oil for a couple of minutes
You can add a little pepper to this
Could be cayenne or the good old scotch bonnet
Get the Banana blossom break it up
Remove some of the parts that are tough
Shred it in your fingers hands on stuff
Add it to the pan when you think that's enough
Add more seasoning now if you wish
Bell peppers thyme tomatice(tomato)
If you are adding salt only add a little bit
Of the pink himalayan or the grey celtic
Cook it down 15 minutes
Get the Ackee add it to it
With a fork a delicate mix
Simmer down for a bit that’s it
What does it go with it’s your choice
Could be quinoa, bulghar peas and rice
Take my advice
Ackee and Banana blossom is nice
